In Word 2007, you can color your page behind your text. You can choose from various colors or even gradients, or multiple colors, when picking your page’s background color. 1 Click the Page Layout tab on the Ribbon.
It sounds like the tutorials you're citing are based on a Windows version of Office which have a full set of UI features for Customizing Themes. Those tools are not included in Office for Mac. The Mac Office UI is quite limited in what it has to offer for that purpose & what can be done must be done in PowerPoint. None of the other programs provide any tools for creating Custom Themes. In Mac PPT you can create Custom Theme Colors combined with any of the built-in Theme Font pairs. To do more than that you have to write your own XML files.

. If you haven't already applied a theme, on the Design tab, click Themes, and then click the one you want to use. Customize the theme any way you like by changing the colors, fonts, paragraph spacing, watermark, background colors, or page borders on the Design tab.
On the Design tab, click Themes, and then click Save Current Theme. In the Save Current Theme dialog box, type a name for your new theme and click Save. To apply your theme in another document, on the Design tab, click Themes, and then select the theme from the Custom section.
